Salmon Baked with Herbs
If you would like to slow cook the steaks in the oven, place salmon in a foil-lined shallow pan, and spread some garlic butter and herbs over it. Parsley, dill, rosemary or marjoram work well, also a little lemon or lemon pepper. Bake for 45 minutes or so at 350 (until the fish is flakey).

Sweet Salmon
If you have a sweet tooth, mix a cup of brown sugar and tablespoon of mustard together. Add a little soy sauce to form a glaze. Cover the steaks with this mixture in a shallow foil-lined pan. Bake for 45 minutes or so at 350 (until the fish is flakey).

Pete's Smokin' Salmon Brine
2-1/2 cups  Water
1 cupSoy sauce
1/2 cupApple cider vinegar
3 Tbs.Worchestershire sauce
1/3 cupSugar
1/3 cupBrown sugar
1/3 cupSea salt (non-iodized)
6 clovesGarlic (pressed)
1 Tsp.Garlic powder
1 Tsp.Onion powder
1 Tsp.Chinese 5-spice
1 Tsp.Paprika
1 Tsp.Black pepper
1 Tsp.Cayenne

Heat and stir all ingredients together in a saucepan on warm just enough to get everything to dissolve. Cool.
Soak fish overnight. Rinse fish. Set on rack to dry. Smoke 8 hours with 3 pans of chips.

Frozen so fast, it's practically still swimming...
